Weaver's dining room at dusk
Lisbon · Old Town · Est. 2014

Where fire meets
the season.

A contemporary restaurant built around an open hearth and produce picked at its peak. Unhurried evenings, considered plates, a cellar worth lingering over.

Our Story

A neighbourhood table with an open flame at its heart.

Weaver's began as a single hearth and a simple belief: that the best cooking happens when you let great produce, live fire and patience do the talking. A decade on, that conviction still guides every plate that leaves our pass.

We change the menu as the markets change — coastal one week, rooted in the soil the next — always cooked over wood, always with intent.

A glimpse of the menu — three dishes that capture how we cook: fire-led, produce-first, quietly precise.

The Experience

More than a meal — an evening shaped by fire, season and hospitality.

The Hearth

An open wood-fired kitchen anchors the room — every plate carries a whisper of smoke and the rhythm of live fire.

Seasonal & Local

Menus shift with the markets. We work hand-in-hand with growers, divers and foragers within a day's reach of the door.

The Cellar

Three hundred references, low-intervention and classic alike, guided by sommeliers who pair by feeling, not by rule.

Head chef and founder of Weaver's
The Kitchen
“Fire is honest. It rewards patience and punishes shortcuts. We simply listen to the produce and let the hearth finish the sentence.”

Trained across the kitchens of San Sebastián and Copenhagen, our founder returned home to build a restaurant around a single hearth and the growers who supply it. Every service is cooked the same way it began — by hand, over wood.

In Good Company
“An unhurried, deeply considered evening. Every course felt like a postcard from the season — the hearth-cooked beef is reason enough to return.”
